Hartwell, Ga locals are counting down the days to the grand opening of a new French bakery in the downtown area. While a French bakery might not seem like a natural fit in our small southern town, we beg to differ.
When using authentic French technique, Elizabeth Bryant-Reeves of Cakes By Design says, “It’s all in the butter.” In France, they are serious about their butter.
Yep, butter. Now we’re talking a southerner’s language.
It’s all about the butter
Just like Paula Dean imparts a sumptuousness to her dishes with heavy doses of real butter, Elizabeth weaves layers of butter and dough into perfectly fluffy croissants.
Most of the croissants we eat in the states are made with butter substitutes like margarine which doesn’t make as light and fluffy of a result. While margarine and other substitutes are cheaper, the cost savings does have its drawbacks.
The less expensive it is, the more your butter is diluted with water. So that means when you bake with it, the water evaporates leaving no flavor. But real butter is creamy and sweet, and the high fat content of real butter slows evaporation and makes those perfect pockets of air inside a true French croissant.
Fun fact: In France, it’s traditional that an ‘ordinary’ croissant (made with margarine) should be formed into a crescent shape. While a butter croissant is straight, lacking the curved tips.
So that crescent croissant we’re all used to is actually something less than a croissant. It’s a cheap substitute. Real croissants are rich and indulgent, and when you taste them, we’re quite sure you’ll be able to taste the difference.

The best croissants are truly a labor of love. Composted of 81 alternating layers of butter and pastry dough, it takes days to get it just right. But oh my, when they’re done, it’s so worth the effort.
New Bakery In Hartwell
The new bakery is fittingly sharing a space with a local coffee shop. Customers will be able to purchase freshly baked croissants and other baked goods every morning with their favorite coffee drink.
Located in the old Ford dealership, their set up is pretty awesome offering plenty of outdoor space and even a firepit. Customers are encouraged to linger and indulge in their favorite treats.

Elizabeth – Cakes By Design will be offering a daily selection of macarons, eclairs, layer cakes, and more. Of course, she will be making custom orders and brides will be wowed by her simple, yet elegant cake designs and variety of flavors.
